Ribs

Ribs are one of our favorite meals at Madison Campground. You can even make ribs over the campfire on your next adventure! Here’s a recipe for campfire ribs:

Ingredients:

  • Rack of ribs (pork or beef)
  • Barbecue sauce (store-bought or homemade)
  • Dry rub (optional)
  • Aluminum foil
  • Cooking oil or non-stick spray
  • Salt and pepper to taste
  • Optional: additional seasonings or spices of your choice

Instructions:

  1. Prepare the campfire: Build a fire and let it burn down to hot coals. You’ll need a good bed of hot coals for cooking.
  2. Precook(optional): If you prefer them tender, you can precook them at home before heading to the campsite. Boil them in a pot of water or bake them in the oven until they are partially cooked. This step will help to shorten the cooking time at the campsite and ensure the ribs are tender.
  3. Season: If using a dry rub, generously season both sides of the ribs with the rub, along with salt, pepper, and any additional seasonings or spices you prefer. Allow them to marinate for at least 30 minutes to enhance the flavors.
  4. Prepare the foil packets: Tear off a large sheet of heavy-duty aluminum foil. Lay the foil flat and apply cooking oil or non-stick spray in the center of the foil to prevent sticking. Place the seasoned ribs on top of the oiled area.
  5. Wrap the foil packets: Wrap the foil tightly around the ribs, creating a sealed packet. Ensure there are no openings for the juices to leak out during cooking. For added protection, you can double-wrap with another layer of foil.
  6. Cook: Place the foil packets directly onto the hot coals of the campfire. Let them cook for approximately 1 to 1.5 hours, flipping the packets once halfway through cooking. Cooking times may vary depending on the thickness of the ribs and the heat of the coals, so it’s important to monitor them closely.
  7. Glaze with barbecue sauce: After they have cooked for the desired time, carefully open the foil packets (be cautious of the hot steam). Brush the ribs generously with barbecue sauce on both sides. Place them back on the coals, unwrapped, for another 10-15 minutes to allow the sauce to caramelize and create a sticky glaze. Flip the ribs once or twice during this final step to ensure even coating.
  8. Serve and enjoy: Once they are glazed and slightly charred, remove them from the fire. Let them rest for a few minutes, then slice them into individual portions. Serve the campfire ribs with additional barbecue sauce on the side and any desired sides, such as coleslaw, cornbread, or grilled vegetables.
