Chicken Curry
Here’s a simple and flavorful chicken curry recipe:
Ingredients:
- 1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 tbsp cooking oil (vegetable, canola, or coconut oil)
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp chili powder (adjust to taste)
- 1 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
- 1-2 green chilies, slit (optional for extra heat)
Instructions:
- Heat oil: In a large pan, heat the oil over medium heat. Add the cumin seeds and let them splutter for a few seconds.
- Sauté onions: Add the chopped onions and sauté until they turn golden brown.
- Add garlic and ginger: Add the minced garlic and grated ginger, and sauté for another 1-2 minutes until fragrant.
- Spices: Add turmeric, ground cumin, ground coriander, and chili powder. Cook the spices for about 30 seconds, stirring constantly to avoid burning.
- Tomatoes: Add the chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.
- Add chicken: Add the chicken pieces to the pan and stir to coat them in the spice mixture. Cook for about 5-7 minutes, until the chicken starts to brown.
- Coconut milk: Pour in the coconut milk, stir well, and bring the mixture to a gentle simmer. Cover the pan and cook for 15-20 minutes, until the chicken is fully cooked and tender. Stir occasionally.
- Garam masala: Once the chicken is cooked, stir in the garam masala and green chilies (if using). Cook for another 2-3 minutes.
- Season and garnish: Taste the curry and adjust the salt if needed. Garnish with fresh cilantro.
- Serve: Serve the chicken curry hot with steamed rice, naan, or roti.
