Campfire Corn Chowder

Here’s a delicious Campfire Corn Chowder recipe — hearty, smoky, and perfect for those cozy campground nights!🌽
Serves: 4–6
Cook Time: ~30 minutes
Cook Method: Campfire, cast iron pot or Dutch oven
🧺 Ingredients:
- 4 slices bacon (optional for added smoky flavor)
- 1 tbsp butter (or olive oil)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2–3 medium potatoes, diced (Yukon gold or red work great)
- 1 red bell pepper, diced
- 1–2 cups fresh or canned corn (drained)
- 3 cups chicken or vegetable broth
- 1 cup milk or half-and-half
- Salt & pepper to taste
- 1/2 tsp smoked paprika (optional, but highly recommended)
- Fresh parsley or green onions for garnish
🔥 Directions:
- Cook the bacon (if using) in your Dutch oven over medium heat on the campfire until crispy. Remove and set aside, leaving the grease in the pot.
- Add butter (if not using bacon grease), then sauté the onion, garlic, and bell pepper until soft, about 5 minutes.
- Add potatoes and corn, stir to coat.
- Pour in the broth and bring to a gentle boil. Simmer for 10–15 minutes, or until the potatoes are tender.
- Stir in milk/half-and-half and smoked paprika. Let it heat through, but don’t boil.
- Season with salt and pepper, crumble the cooked bacon back in (if using), and stir.
- Garnish with fresh herbs and serve hot with bread or crackers!
