Chorizo Breakfast Sandwich
Chorizo breakfast sandwiches are a delicious and hearty way to start your day while camping. Here’s a simple recipe that you can try:
Ingredients:
- 4 English muffins, split
- 4 eggs
- 4 ounces of chorizo, diced
- 1/2 cup shredded cheddar cheese
- Salt and pepper, to taste
- Cooking spray
Tools:
- Campfire grill grate or cast iron skillet
- Mixing bowl
- Spatula
Instructions:
- Lightly grease the grill grate or skillet with cooking spray and place it over the campfire.
- In a mixing bowl, whisk together the eggs, salt, and pepper.
- Add the diced chorizo to the bowl and mix well.
- Pour the mixture onto the grill grate or skillet, and cook for 2-3 minutes, stirring occasionally, until the eggs are fully cooked and the chorizo is browned.
- While it is cooking, place the English muffins on the grill or skillet to lightly toast.
- Once the muffins are toasted, sprinkle the shredded cheddar cheese on the bottom halves.
- Spoon the mixture over the cheese, then top with the other half of the muffin.
