Campfire BBQ Chicken and Pineapple Kabobs Recipe

Ingredients:

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

Instructions:

  1. Preparation:
    • If using wooden skewers, soak them in water for at least 30 minutes.
    • Preheat your campfire or grill to medium-high heat.
  2. Marinate the Chicken:
    • In a bowl, combine the chicken cubes with olive oil, salt, pepper, garlic powder, and smoked paprika. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes.
  3. Assemble the Kabobs:
    • Thread the chicken, pineapple chunks, bell pepper pieces, and red onion pieces onto the skewers, alternating between the ingredients to create a colorful pattern.
  4. Grilling:
    • Place the assembled kabobs on the grill or over the campfire.
    • Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
    • Brush the kabobs with BBQ sauce during the last few minutes of cooking, allowing it to caramelize.
  5. Serve:
    • Once done, remove the kabobs from the grill.
    • Serve hot, with extra BBQ sauce on the side if desired.

Tips:

  • Vegetable Alternatives: You can use other vegetables like zucchini, cherry tomatoes, or mushrooms in this recipe based on your preference.
  • Additional Flavor: For extra flavor, you can marinate t he chicken overnight in the BBQ sauce and spices mixture.
  • Side Dishes: Serve the kabobs with a side of grilled corn, a fresh salad, or rice for a complete meal.
