Premixed Buttermilk Pancake Recipe

This mix can be stored and used whenever you want to make fresh pancakes quickly. This recipe makes for an easy breakfast meal to make while camping!

Premixed Buttermilk Pancake Mix

Ingredients for Pancake Mix:

  • 4 cups all-purpose flour 
  • 1/4 cup granulated sugar
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk powder

Ingredients for Pancakes (per batch):

  • 1 cup pancake mix
  • 1 cup water
  • 1 large egg
  • 2 tablespoons melted butter (or vegetable oil)
  • 1 teaspoon vanilla extract (optional)
Instructions:
  1. Prepare the Pancake Mix:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and buttermilk powder until well combined.
    • Store the pancake mix in an airtight container in a cool, dry place. This mix should last for up to 3 months.
  2. Make the Pancakes:
    • Preheat a griddle or non-stick skillet over your campfire or heat source.
    • In a mixing bowl, combine 1 cup of the pancake mix with the water, egg, melted butter, and vanilla extract (if using). Stir until just combined; the batter will be slightly lumpy.
    • Lightly grease the griddle or skillet with butter or cooking spray.
    • Pour 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown and cooked through.
    • Serve warm with your favorite toppings such as maple syrup, fresh berries, or whipped cream.
Tips:
  • You can adjust the thickness of the batter by adding more or less water.
  • For extra flavor, you can add a pinch of cinnamon or a handful of chocolate chips to the batter before cooking.
  • If you want to make a larger batch of pancakes, simply multiply the ingredients accordingly.
