Campfire Cowboy Stew

Campfire cowboy stew is a hearty and satisfying meal that can be enjoyed during your camping adventures. It’s a one-pot dish that combines comforting flavors and is perfect for sharing around the campfire. It typically includes meat, beans, vegetables, and potatoes. Here’s our favorite version of campfire cowboy stew:

Ingredients:

  • 1 pound package smoked sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10.5 ounces) condensed tomato soup
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup frozen corn
  • 4 cups frozen hash browns or cubed potatoes
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped green onions

Instructions:

  • Prepare your campfire and let it burn down to a bed of hot coals.
  • In a large cast-iron skillet or Dutch oven, cook the sausages over the fire until the skin is golden in color. Add diced onions and minced garlic, and continue cooking until the onions are softened.
  • Stir in the kidney beans, black beans, condensed tomato soup, condensed cream of mushroom soup, and frozen corn. Season with salt and pepper to taste. Mix well to combine all the ingredients.
  • Layer the frozen hash browns or cubed potatoes on top of the sausage and bean mixture. Cover the skillet or Dutch oven with a lid or foil.
  • Place the skillet or Dutch oven on a grate or over a bed of hot coals. Cook for about 30-45 minutes, or until the potatoes are tender and the flavors have melded together. Rotate the skillet occasionally to ensure even cooking.
  • Remove from the heat and let it cool for a few minutes before serving.
  • Optional: Sprinkle shredded cheese on top of the casserole and let it melt over the heat. Garnish with chopped green onions for added flavor and freshness.
  • Serve the campfire cowboy stew directly from the skillet or Dutch oven.
